The Teres Major is as tender as the Filet Mignon but with a meatier flavor. This rare cut needs to be extracted by a skilled butcher. You will also hear it called Petite Tender. There are only 2 small loins available per steer, cut into steaks. Approximate weight is 6-8 oz.
